This "egg style" quick mix is yellow/tan in color and the granulation is a fine powder. The flavor is egg-like and savory. "Egg Style" quick mix can be used to make egg style scrambles, quiches, frittatas and omelets.
Ingredients: organic soymilk powder (organic soybeans), nutritional yeast (dried yeast, niacin, pyridoxine hydrochloride, thiamin hydrochloride, riboflavin, folic acid, cyanocobalamin), black sea salt (salt, herbs), methylcellulose, konjac gum (xanthan gum), carrageenan, potassium carbonate and turmeric for color (contains water, maltodextrin, citric acid).
3/4 Basic "Egg Style" Quick Mix
3½ cups Ice cold water
¼ cup warm vegan butter or veg oil
½ teaspoon ground black pepper, optional
Pour dry mix into mixing bowl, add ice cold water and mix until evenly incorporated. Let set for 5 minutes.
On medium heat, preheat a lightly oiled saute pan
Transfer egg like mixture into heated pan, and spread over surface with spatula. Let cook on medium heat for 3 minutes (should be firm on top when touched)
Stir and chop with spatula for one minute and then pour vegan butter or oil on top and ground black pepper on top and stir into scramble.
NOTE: may need to cook longer if cooking larger volumes. The longer it cooks, the firmer a gelatinous texture continues to develop as in real eggs.
